Homestyle Kung Pao Chicken
Diced chicken breast is velveted, flash-fried with Sichuan peppercorns, dried chilies, and garlic, then tossed with cucumber, roasted peanuts, and a balanced sweet-tangy sauce, delivering the numbing-spicy crunch of a properly made homestyle kung pao chicken.

Cut the chicken breast into small cubes, first mix with an appropriate amount of sesame oil, then add a little starch, cooking wine, white pepper, and salt, and marinate for ten minutes;

Cut the cucumber into small cubes; cut the dried chili into sections; slice the garlic; chop the green onion; slice the ginger;

Add vinegar, sugar, soy sauce, cooking wine, and a little starch to a small bowl and mix into a sauce to set aside.

Put the peanuts in the oven and bake for 5 minutes, then remove the skins. Next, stir-fry them in oil until fragrant, then take them out and set aside for later use.

Heat oil in a pan, add Sichuan peppercorns and stir-fry until fragrant, then remove them. Add diced chicken and stir-fry until it turns white.
