
Spicy and Sour Chicken Feet
Chicken feet are braised until the skin and tendons turn sticky-tender, then soaked in a bright pickled marinade of vinegar, chilli, lemon and garlic. Chilled before serving, they are tangy, fiery and endlessly snackable.
Instructions

Clean the chicken feet, trim off the nails, cut them in half, and blanch them in boiling water. Add ginger slices and cooking wine to remove the odor.

Cook the chicken feet until chopsticks can easily pierce through, then remove them, rinse with water, and clean off the surface oil.

Prepare a basin of ice water

Put the chicken feet in to soak, preferably place the whole bowl in the refrigerator to chill.

Cut the chili peppers into sections, slice the ginger, smash the garlic, cut the cilantro into pieces, and tear the perilla leaves (optional) into pieces.

Pour into a container and slice a few lemons.

Add light soy sauce, vinegar, and sugar to season (adjust the sour, sweet, and salty to your own taste)

Take the chicken feet out of the ice water and put them into a container, sprinkle some toasted sesame seeds, and mix well.

Sour, spicy, salty, and sweet; refrigerate overnight for even more deliciousness~
