Stir-fried edamame

Young green soybeans crackle through a hot wok with garlic and dried chili, blistered until smoky yet still crisp, a humble, beer-friendly snack that disappears faster than you can shell it.

    Shell and clean the edamame, slice the garlic thickly, and cut some green and red peppers.

    Heat the oil, when the oil is hot, add the garlic and stir-fry until fragrant, then add the beans and stir-fry until they change color, pour in half a small bowl of water.

    Turn the heat to high and cook for 3-5 minutes until done. When the water is almost boiled dry, add the chili peppers and stir-fry evenly, then add salt, MSG, and oyster sauce, stir-fry evenly, and serve.
