Little Sea Snail
Fresh small sea snails are boiled just until the meat pops free, then chilled for extra bounce, served with a sharp mustard dipping sauce that tingles the nose and highlights the oceanic sweetness.

Rub the small seashell with salt to wash it, cleaning off the mucus on the small seashell.

Seasoning: Mince the garlic, cut the ginger into strips, add an appropriate amount of light soy sauce, vinegar, and mustard, and mix well.

Put 2 slices of fresh ginger in the pot, add an appropriate amount of white wine, and bring to a boil.

Add the washed small sea snails and cook for 3 minutes.
