Chicken wing pieces marinated in oyster sauce and soy are pan-seared, then braised with plump shiitake mushrooms and their fragrant soaking liquid. Earthy umami soaks into the meat as the sauce reduces to a glossy glaze.

    Soak the shiitake mushrooms in an appropriate amount of water in advance.
