A luxurious Jiangnan take on yiduxian: sea bass, clams, river shrimp, and salted pork simmer with spring bamboo shoots into a milky, pepper-kissed broth. Land and sea umami meld in one elegantly light, deeply nourishing soup.

    Ingredients: Clams (washed), sea bass (cleaned), white river shrimp (beard removed and washed), salted pork (washed, sliced, and soaked in clean water for 30 minutes), Lei bamboo shoots (peeled and cleaned), ginger slices.

    Place the bamboo shoots on the cutting board and cut them into rolling knife pieces.

    Then, put the cut bamboo shoots into a pot of clear water, blanch them, and remove.

    Heat oil in a pan until hot, then add the sea bass and sear both sides briefly.
