
Golden Squid Rings
Fresh squid rings are marinated with cooking wine, coated in starch, egg, and golden breadcrumbs, then shallow-fried until crisp. Crunchy outside, springy inside, best dipped in ketchup or dusted with white pepper for snacking.

Take fresh squid, remove the innards, wash clean, then cut into rings. After draining the water, sprinkle a little salt and cooking wine and let it marinate.

Beat the eggs well, and separately place the starch and breadcrumbs for later use.

Coat the squid rings evenly with cornstarch first, then dip them in the beaten egg, and finally coat them with breadcrumbs.

Take a pot, pour in oil and heat it, add the coated squid rings, and fry on low heat until golden.

Sprinkle with pepper before taking it off the heat, or prepare a separate ketchup dipping sauce, drain the oil, and then plate.
