Stir-fried Wild Celery with Cured Pork
Peppery wild celery, freshly gathered and blanched, is stir-fried with smoky cured pork belly and garlic. The fatty cured meat renders silky while the grassy stalks stay crisp, creating a rustic Hunan-style balance of smoke and green.

The wild celery freshly picked from the field is very tender, wash it and set it aside.

Blanch in boiling water and remove for later use.

Cut into small pieces and set aside.

Fry the cured meat with a little oil until fragrant, add minced garlic, and if you like it spicy, add chili peppers.

Add the blanched and cut celery, then add a spoonful of oyster sauce and mix well before serving.
