Stir-fried Sausage with Ferns

Wild fiddlehead fern shoots, blanched for tenderness, are wok-tossed with garlicky Chinese sausage, bird's-eye chilies, and chili powder. Earthy, springy fern crunch meets smoky cured pork in this punchy, mildly spicy mountain-country dish.

    Remove the flowers from the fern, wash it clean, wash several times, boil water in a pot, and blanch the cut fern in the boiling water.

    Heat oil in a pan, add small chili peppers and garlic to stir-fry until fragrant, then add sausage to stir-fry until fragrant.

    Add the fiddlehead ferns. Stir-fry for a while, then add light soy sauce, salt, and chili powder. Stir-fry evenly, add MSG, and remove from the pan.
