
Quick-blanched lettuce
Tender lettuce leaves are briefly tossed in a hot wok, then drenched with sizzling oil poured over garlic, chili, and Sichuan peppercorns. The result is a pungent, vinegary salad-vegetable dish with wilted edges and crunchy centers.
Instructions

Wash the lettuce, soak it in boiled water for a few minutes, and drain the water for later use.

Take a small bowl to mix the seasoning, reducing the time spent adding the seasoning when blanching the lettuce. In the small bowl, add salt, chili, minced garlic, soy sauce, vinegar, and Sichuan peppercorns in order.

Add cooking oil to the pan, heat it while gradually pouring it into a small bowl in batches until the oil starts to smoke, then turn off the heat.

The pan is still hot, quickly pour the lettuce into the pan, and stir-fry the lettuce with a small amount of salt.
