Chilled crisp lettuce leaves bathe in laozhi, a tangy-savory cold dressing of vinegar, soy, and aromatics. Refreshing and palate-cleansing, it is the lightest way to enjoy lettuce, perfect alongside richer grilled or fried dishes.

The green lettuce was grown by my family's hardworking eldest sister-in-law.

Add an appropriate amount of minced garlic and shredded bird's eye chili into the bowl.

Fry in hot oil, releasing an aromatic fragrance.

Add soy sauce, aged vinegar, white sugar, and sesame oil, and mix well; the sauce is ready.

Bring the water in the pot to a boil, pour in an appropriate amount of oil and salt, and add the lettuce.

Blanch in boiling water for 30 seconds, then turn off the heat.
