
Braised Gou Fresh
An assortment of small river fish red-braises together in a soy-based sauce with ginger, garlic, and a touch of sugar. The mixed catch turns tender inside a glossy, savory-sweet glaze, a rustic feast straight from the waterway.
Instructions

Scale the fish, remove the gills and intestines, wash it clean, and drain.

Heat oil in the pan, place the fish in one by one, and fry until both sides are golden brown.

Put the pan-fried fish into the wok, drizzle some cooking wine, and add a bowl of clear water.

Add ginger, garlic, and green onions, and an appropriate amount of pepper.

Add an appropriate amount of light soy sauce, dark soy sauce, and half a spoon of chili paste, then simmer over medium heat for 8-10 minutes.

Add a little bit of salt and reduce the sauce over high heat.

Sprinkle some chopped green onions, and it’s ready to serve.
