Braised Salted Meat with Spring Bamboo Shoots

Spring bamboo shoots stew with slices of salted pork, the cured meat's richness meeting the shoots' fresh, nutty sweetness. A seasonal Jiangnan braise where the year's first bamboo tastes its absolute best.

    Peel the spring bamboo shoots, wash them clean, and cut them into large irregular pieces.

    Cut the salted meat into thick slices and rinse them with warm water.

    When the water in the pot boils, add the spring bamboo shoots and blanch them briefly before taking them out. This can remove some oxalic acid and bitterness.

    Blanch the salted meat as well to remove some of the saltiness.

    Heat oil in a pan, add minced ginger and stir-fry until fragrant, then add salted meat and sauté briefly.
