
Stir-fried Long Beans with Salted Pork and Dried Tofu
Salted pork lends its cured depth to crisp long beans and chewy dried tofu in a quick stir-fry. Three textures, one savory harmony, this dish turns pantry staples into a perfect rice companion.
Instructions

Wash the freshly picked yardlong beans;

Cut the dried tofu and salted meat into strips, the cowpeas into sections, slice the garlic, and cut the chili into rings;

Add the salted meat to the pot, turn to medium-high heat, sauté until the oil is released, then remove the salted meat, leaving the oil in the pot;

Add the dried tofu, stir-fry until light golden, then remove from the pan and set aside;

Heat oil in a pan, add sliced garlic and chili rings, and stir-fry until fragrant;

Pour in the cowpeas and stir-fry until just cooked.

Add the dried tofu and salted meat, sprinkle in 1/3 teaspoon of fine salt, 1/4 teaspoon of sugar, and 1/3 teaspoon of pepper, and stir-fry a few times;

Pour 1 tablespoon of light soy sauce and 1/2 tablespoon of white wine around the edge of the pan, quickly toss to combine, then serve and start eating.
