Exclusive Sweet and Sour Pork with Pineapple
Pork pieces are double-fried for an extra-crisp shell, then lacquered in glossy sweet-and-sour sauce with juicy pineapple. The tropical fruit brightens the tangy glaze, keeping this Cantonese classic playful, crunchy, and irresistibly moreish.

Method of preparation: Peel one pineapple and cut it into small pieces. Place the pineapple in a container, add a little salt to clean water, soak for 10 minutes to remove the astringency and make the pineapple taste sweeter.
- 3

Choose pork tenderloin, which is tender and fresh in taste. Use an appropriate amount of meat and cut it into small pieces.
- 4

Rinse the meat with clean water to remove blood and any fishy smell, then drain the water and set aside.
- 5

Half meat, half potato starch, add a little water, and mix well.
- 6

Add an appropriate amount of oil and stir until the yogurt is paste-like, then let it rest for about 30 minutes.
- 7

Cut an appropriate amount of green peppers and carrots into small pieces, set aside.
- 8

Add an appropriate amount of oil to the pan, add the meat pieces when the oil is at medium heat, let them set slightly, and gently shake the pan with a container.
- 9

Fry until cooked the first time, then take out.
- 10

For the second frying, heat the oil, add the meat pieces, fry for 30 seconds and remove them. Double frying makes them crispier.
- 11

After frying the meat pieces, blanch the carrots and green peppers in oil for 10 seconds and then take them out.
- 12

For the seasoning sauce, put a little oil in the pan, sauté the scallions, ginger, and garlic until fragrant, remove the residue, add an appropriate amount of ketchup, white vinegar, white sugar, a little cornstarch water, and salt, and thicken to a yogurt-like consistency.
- 13

Add the ingredients and stir-fry evenly until everything is coated with the sauce, then it can be served.
