Stir-fried Razor Clams with Scallions and Ginger

Plump razor clams flash-fry with scallion and ginger, their briny juices forming a light, aromatic sauce. A splash of cooking wine removes any fishiness, leaving the tender clams sweet, clean, and tasting purely of the sea.

    Wash the razor clams and put them in water with salt and vegetable oil, soaking for three hours to expel sand.

    Scoop out and drain the water.

    Boil water in a pot and add scallions, ginger, and cooking wine.

    After the water boils, add the king razor clams and blanch for three minutes.

    When the water boils again, take out the King razor clams.
