
Exclusive Sour Plum Ribs
Glazed pork ribs simmer in a glossy sauce of sour plums, their fruity tang balancing the caramelized sweetness. The meat turns tender enough to slide off the bone, coated in a lacquered sauce that is bright, sticky, and completely finger-licking.

Clean the ribs thoroughly (wash with salt and flour).

Preparation: ginger, garlic, shallots.

Sour plum.

Needs to be crushed to release flavor easily.

Heat the pan with a little oil, and put the ribs in to fry over medium heat.

Pan the other side until both sides are slightly crispy and fragrant.

Add ginger, garlic, and shallots and stir-fry until fragrant.

Add an appropriate amount of soy sauce, dark soy sauce, and sugar, and stir-fry evenly.

Put the sour plums in.

Add boiling water to the level of the ingredients.

Bring to a boil over high heat.

Change to medium-low heat, cover with a lid, and simmer for more than 30 minutes (the level of tenderness depends on personal preference).

After braising for about twenty-five minutes, add a spoonful of fragrant vinegar and continue to cook for about ten more minutes.
