Braised Tofu with Scallions

Firm tofu blocks are pan-seared until golden, then braised in a savory sauce loaded with scallion segments. The aromatic allium infuses the braising liquid, giving the tofu a sweet-savory glaze that makes it far more addictive than plain tofu deserves to be.

    Cut the tofu into small pieces by hand.

    Place it on a plate and set aside.

    Cut the scallions into horse-hoof shapes and the green chili peppers into small pieces.
