Shake the chili

A specialty from Anren in Hunan where fresh peppers are pounded in a wooden mortar with a pestle until broken and bruised. The pounding releases the peppers' raw fragrance, and a touch of garlic and oil turns them into a rustic, fiery side.

Instructions

    Heat oil in a pan, reduce the heat, add the red peppers (washed, stem removed, cut into rings) and stir-fry until cooked and softened (green peppers should be stir-fried until blistered and whitish). Note: Do not add water.

    Add the chopped ginger and garlic, and stir-fry evenly.

    Add salt and soy sauce and stir-fry evenly.

    Add soybean oil and stir-fry evenly.

    Sprinkle with chopped green onions and stir-fry evenly, then remove from the pan.

    Place it into a pepper mortar (a special tool used by people from Anren for shaking chili, which cannot be replaced by other tools to achieve the same good effect) and crush the chili with a wooden mallet.
