Exclusive Braised Lamb with Potatoes
Lamb and potato chunks are braised slowly with aromatics until the meat turns fork-tender and the potatoes drink up the rich, spiced broth. Warming, hearty and gently gamey, it is a cold-weather favourite across northern China.

Put the lamb in cold water and blanch it to remove the blood water.

Ginger, star anise, and bay leaves, set aside.

Peel the potatoes and cut them into large chunks.

Heat oil in the pan and stir-fry until fragrant.

Add the lamb and stir-fry until the moisture evaporates.

Add an appropriate amount of oyster sauce, light soy sauce, and dark soy sauce.

Stir-fry evenly until colored.

Add an appropriate amount of water.

Transfer the lamb into the electric pressure cooker.

Cook beef and mutton in an electric pressure cooker on high until the program ends.
