
Pomfret with sauce
A whole pomfret steams for fifteen minutes, then receives a hot, glossy sauce poured over the top at the table. The fish stays moist and delicately sweet beneath the savory drizzle, an elegant, fuss-free centerpiece for family dinners.

Clean the pomfret, remove the gills and internal organs, and make crisscross cuts to help it absorb the flavor.

Moonfish is marinated with cooking wine, steamed with soy sauce for fish and salt until flavored. Bring water in a pot to a boil, place the fish in a steaming plate, add sections of green onion, cover, and steam for 15 minutes.

Sauce: Mix light soy sauce, cooking wine, ginger powder, salt, chicken essence, starch, and water evenly.

Add an appropriate amount of cooking oil to the pot, then pour in the sauce and bring it to a boil.

Prepare chopped green onions and red pepper rings.

Pour out the steamed fish's broth, pick out the scallion segments, place the fish on another plate, pour the broth that was just made over the fish, and sprinkle with chopped green onions.
