
Easy Baked Ribs
Steamed until tender, pork ribs get a quick sear for color, then glaze in a simple sauce of light soy, dark soy and sugar. The two-step shortcut guarantees juicy meat with caramelized edges, an easy braise for busy weeknights.

Boil some water, put the ribs in to cook out the blood and foam.

Blanch the ribs and put them in a bowl, then steam them in an electric pressure cooker using the water separation method. You can just use the rice cooking function; it doesn't need to be too long or overcooked.

Heat oil in a pan, and put the steamed ribs into the pan to fry slowly over low heat. Make sure the ribs have as little water as possible, otherwise it will splatter. The juice left in the bowl from steaming the ribs can be saved to cook noodles or something.

After frying the ribs until golden brown, add an appropriate amount of light soy sauce, dark soy sauce, and sugar, and stir-fry evenly.

Add a little water, cover the pot, and simmer for a while; the purpose is to let the flavors soak in.

When the liquid has almost dried, collect the sauce.
