Stir-fried Chicken Cubes with Snow Peas and Cashews

Diced chicken stir-fries with snappy sweet peas, bamboo slices and toasted cashews for a dish rich in color and texture. The nutty crunch against tender chicken and crisp greens makes this light, elegant plate a weeknight winner.

    Cut the chicken breast into cubes, add salt, cooking wine, light soy sauce, and cornstarch slurry, mix well, and marinate for 10 minutes.
