Rice Wine Braised Chicken Drumsticks
Chicken legs braise in sweet fermented rice wine for twenty minutes until the meat turns tender and lacquered in a gently boozy glaze. The natural sweetness rounds out the savory notes, an aromatic dish that tastes far more complex than its effort.
Instructions
- 1

Add vegetable oil to the pan, then add the chopped chicken thighs and stir-fry until they change color.
- 2

Add green onions, ginger, garlic, and star anise and stir-fry until fragrant, then add green Sichuan pepper powder, cooking wine, light soy sauce, dark soy sauce, fermented rice wine, and salt, and stir evenly.
- 3

Pour in an appropriate amount of water, bring to a boil, then reduce to medium heat, cover, and simmer for 20 minutes. Turn to high heat to reduce the sauce, and sprinkle with chopped green onions before serving.
