
Stir-fried Snow Vegetables with Bamboo Shoots and Broad Beans
Spring bamboo shoots and creamy fava beans meet salty pickled mustard greens in a vibrant seasonal stir-fry. The briny greens sharpen the sweetness of young shoots and beans, capturing the taste of Jiangnan springtime in one quick dish.

Rinse the pickled mustard greens several times with water (if it's too salty, soak it in water for a while).

A suitable amount of fava beans, and I also added some peas.

After peeling and blanching the bamboo shoots, cut them finely. Prepare chopped scallions, shredded ginger, and dried chili peppers for later use.

Bring water in a pot to a boil, add fava beans and peas, blanch for 2 minutes, then remove.

Add oil to the pan and sauté the scallions, ginger, and chili over low heat until fragrant.

Add the pickled mustard greens and Lei bamboo shoots and stir-fry for a while.

Add the broad bean paste, stir evenly, and cook for a few minutes.
