
Enoki Mushroom Chicken Casserole
Free-range chicken simmers with heaps of enoki mushrooms in a bubbling claypot until the broth turns sweet and deeply chickeny. The mushrooms soak up the golden liquid while the meat stays tender, a warming braise made for family dinners.
Instructions

Half a native chicken.

Chop the chicken into pieces.

Add salt, soy sauce, oyster sauce, pepper, and starch for seasoning.

After mixing evenly, add peanut oil to lock in the moisture, and marinate for half an hour to let the flavors soak in.

Dried enoki mushrooms.

Soak in plain water for five minutes.

Soak the dried enoki mushrooms, then cut some ginger into thin strips.

Prepare an earthenware pot, spray oil on the bottom of the pot, and sprinkle in shredded ginger.

Place enoki mushrooms on the bottom and set aside.

Heat oil in the pan and add the chicken.

Pan-fry both sides until golden brown.

Scoop the stir-fried chicken into the clay pot.
