Exclusive Sauce-flavored Ribs
Pork ribs are seared until golden, then braised with garlic, ginger and scallion in a deeply savory bean-based sauce. The caramelized exterior locks in juicy meat that falls close to the bone, an aromatic dish worth every minute.
Instructions
- 1

Preparation: Black soil pork ribs.
- 2

Rub the pork ribs with salt and flour to clean them.
- 3

Use kitchen paper to absorb the moisture, and mix oyster sauce, light soy sauce, pepper, and potato starch.
- 4

Mix well and marinate for 20 minutes.
- 5

Preparation: garlic, ginger, shallots (red shallots are more fragrant, but we happened to run out at home).
- 6

Heat a pan with a small amount of oil. Since it is a non-stick pan, you don’t need to add much oil. Add the ribs and pan-fry over medium heat.
- 7

Pan-fry until both sides are golden and fragrant.
- 8

Add garlic, onion, and ginger, and stir-fry until fragrant.
- 9

Then transfer the ingredients to an enamel pot and add a little dark soy sauce for coloring (using an enamel pot can save time and also improve the texture of the meat).
- 10

An appropriate amount of boiling water (no need for too much water).
- 11

After bringing it to a boil over medium heat, turn to the lowest heat.
- 12

Cover and cook for 25 minutes (depending on how soft you like it).
- 13

This is after 25 minutes, the sauce is a bit much.
- 14

Just slightly increase the heat to reduce the sauce.
