
Steamed Pork Intestines with Pork Bones
Marrow bones and pork intestines are steamed over enoki mushrooms, absorbing a garlicky, savory sauce as they cook. The long steaming keeps everything succulent while the bones release richness into the mushrooms below, an indulgent dish for bold eaters.

Clean the shank bones thoroughly with salt and starch.

Add salt and cooking wine to marinate for one day. The marinated bones have already darkened in color.

Put minced garlic and minced ginger into a bowl, and pour hot oil over them.

Add soy sauce, oyster sauce, pepper, and starch, and mix evenly.

Pour the sauce into the marrow bone.

Continue marinating until flavorful.

The pork intestines that have already been prepared.

Put the large intestine into cold water in a pot, add ginger and cooking wine, and blanch for five minutes.
