
Braised Sunfish
Pan-fried sunfish turns rich and savory after a slow braise with ginger, garlic, doubanjiang and fragrant basil. The glossy red-brown sauce clings to every bite, and the fish stays moist and flaky, perfect for spooning over hot rice.

The sunfish has already been cleaned and prepared by the vendor. After cleaning, it is salted to absorb the base flavor. Before cooking, the saltiness needs to be washed off.

Ingredients: shredded ginger, garlic, green onions, Jīn Bù Huàn.

Heat oil in the pan, then put the fish in the pan to fry.

Fry until one side is golden, then flip.

Add ginger and garlic and fry until fragrant.

Pour in an appropriate amount of water, and add soy sauce, dark soy sauce, Doubanjiang, and pepper to season.

After braising for five to six minutes, open the lid.
