
Di San Xian
A beloved Northeastern Chinese classic, Di San Xian combines eggplant, potato and carrot that are pan-fried until golden, then braised with garlic sprouts in a savory sauce. The vegetables stay tender inside with caramelized edges, making it an irresistible rice companion.
Instructions

Wash the carrots and cut them into horse hoof-shaped pieces.

Wash the potatoes and cut them into small pieces.

Put it in a large bowl and cut the chili into small pieces.

Cut the eggplant in half.

Soak in white vinegar for 5 minutes.
