Homestyle Stir-Fried Eggplant
Eggplant strips are fried until silky and golden-edged, then cooked down with garlic, soy and a touch of sugar. Soft, savoury and gently sweet, the homely version soaks up sauce like a sponge.

Wash the eggplant and cut it in half.

Make three cuts for one slice, or cut and slice one by one, it will be more flavorful.

Soaking eggplants in salt water for ten to fifteen minutes will prevent them from turning black or changing color.

Squeeze out the water and pat on dry starch.

After the water boils, steam the eggplant coated with flour for 5 minutes.

Cut pork belly or lean meat into small pieces.

Chop the green and red peppers (if you like garlic, you can also chop some garlic).

Chop the green onions.

Prepare the sauce: salt, MSG, sugar, light soy sauce, oyster sauce, starch, water.

A hot pan with cold oil.

Add the minced meat and stir-fry until it turns pale, then add the green and red peppers (together with minced garlic), and stir-fry evenly.

Pour in the cooking wine.

Pour in the sauce and stir-fry evenly.

Add the eggplant and stir-fry evenly.

Add chopped green onions.

Add a little aged vinegar and stir-fry evenly; it tastes more fragrant and won’t be greasy.
