
Stir-fried Eggplant with Green Peppers
Eggplant and green peppers are fried together until the eggplant turns silky and the peppers keep a light snap. Seasoned simply with garlic and soy, the smoky-sweet pairing is a humble stir-fry staple.
Instructions

Eggplant, green pepper.

Slice the eggplant thinly, sprinkle with salt and let soften for 20 minutes, then rinse with water to remove the saltiness, and squeeze out the moisture.

Cut the green pepper into small pieces.

Slices of pork with a mix of fat and lean meat.

Crush the garlic.

Add soy sauce, oyster sauce, doubanjiang, starch, and pepper to half a bowl of water, and mix a sauce to set aside.

Heat oil in the pan and add the pork.

After stir-frying the pork until dry and fragrant, add the garlic cloves.

Stir-fry the garlic until it is fragrant.

Add the eggplant and stir-fry for 2 minutes.
