
Sour Plum Duck
Duck pieces are braised with sour plums, ginger and a sweet-tangy sauce until the meat turns tender and the glaze lacquers deep and glossy. Bright fruitiness balances the rich duck, a Guangdong favourite.

Put the duck meat into a pot of cold water, add ginger slices and cooking wine, and blanch for 5 minutes before removing it.

Three salted and sour plums, remove the pits, and mash the flesh into a paste. Salted and sour plums are a bit salty, so you can add less salt when preparing the ingredients later.

Ginger slices and scallions.

Heat oil in a pan, add ginger slices and onion, and stir-fry until fragrant.

Pour in the duck meat and stir-fry.

Stir-fry the duck until dry and fragrant, then add bay leaves, cinnamon, and star anise.

Add salt, soy sauce, oyster sauce, dark soy sauce, and cooking wine.

Add clear water until it covers the duck meat.

Pour in the salted plum.

Add rock sugar.

After the water comes to a boil, reduce to medium-low heat and simmer for half an hour.

When the time is up, remove the spices and cook the broth until it thickens before serving.
