Loofah Stir-Fried with Eggs
Luffa squash and soft scrambled eggs are stir-fried with a touch of garlic until the gourd turns silky and sweet. Light, juicy and comforting, a homely pairing that celebrates summer's most tender vegetable.
Instructions
- 1

Peel the sponge gourd and cut it into large chunks. Add an appropriate amount of salt to draw out the water, then rinse and squeeze out the water again.
- 2

Crack an egg into a bowl (one of them even has a double yolk).
- 3

Put an appropriate amount of cooking oil in the pan, and stir-fry the eggs first.
- 4

Stir-fry until it reaches this state, then pour it onto a plate and set aside.
- 5

Garlic slices, red pepper rings.
- 6

Put an appropriate amount of cooking oil in the pan, add the sponge gourd pieces and stir-fry, then add sliced garlic and red pepper rings and stir-fry.
- 7

Add the eggs and an appropriate amount of salt, stir-fry, and then remove from the pan.
- 8

Stir-fried loofah with eggs is placed on a plate.

This morning I made multigrain porridge in a pressure cooker, stir-fried loofah with eggs, ugly tangerines, and red dragon fruit. The breakfast is nutritious enough.
