Loofah Stir-Fried with Eggs

Luffa squash and soft scrambled eggs are stir-fried with a touch of garlic until the gourd turns silky and sweet. Light, juicy and comforting, a homely pairing that celebrates summer's most tender vegetable.

    Peel the sponge gourd and cut it into large chunks. Add an appropriate amount of salt to draw out the water, then rinse and squeeze out the water again.
