
Braised Lobster in Soy Sauce
Lobster is braised in a rich sauce of soy, garlic and spices until every piece soaks up the savoury glaze. Sweet, firm meat under a glossy, aromatic coating makes a celebratory centrepiece for any table.

Prepare ginger by cutting it into pieces, slice the garlic cloves, and set aside the scallions.

Prepare Sichuan peppercorns, chili peppers, cinnamon, and star anise for later use.

Heat oil in a pan and add all the ingredients to stir-fry for a while.

Pour in the cleaned lobster.

Keep stir-frying, add salt, dark soy sauce, light soy sauce, then stir-fry again before pouring in a large can of beer, cover and simmer, flipping twice during the process.

Bring to a boil over high heat, then simmer over low heat for about fifteen minutes (while there is still broth in the pot), and sprinkle with chopped green onions.

Serve it out and eat.
