
Sweet and Sour Pork Ribs with Plums
Pork ribs are braised with sour plums until the glaze turns glossy, tangy and gently sweet. The fruit's brightness cuts through the rich meat, giving sticky, fall-off-the-bone ribs with a refreshing finish.
Instructions

Rinse the spareribs clean with salt and flour.

Marinate with salt, soy sauce, oyster sauce, starch, and oil to infuse flavor.

Salted sour plums, rock sugar, ginger, scallions, and garlic, set aside.

Salted sour plums are pitted and mashed into a paste.

Heat oil in a pan, and fry the ribs in the pan.

Pan-fry until both sides are golden brown.

Add scallions, ginger, and garlic and stir-fry until fragrant.

Then add the salted plums, rock sugar, and rice vinegar.

Add half a spoon of dark soy sauce to enhance the color.

Pour in clear water until it covers the ribs, and simmer for 15-20 minutes.

Time's up, collect the juice and take it off the heat.

Sprinkle with white sesame seeds for garnish.
