
Shrimp and tofu
Silken tofu and plump shrimp simmer gently in a light, garlicky sauce thickened just enough to coat. Delicate and clean, the dish lets the seafood's sweetness shine while the tofu turns velvety with every spoonful.
Instructions

Frozen raw South American white shrimp, set aside.

Remove the shells and veins from the shrimp, clean them thoroughly, then place them in a plate. Drizzle a small amount of cooking wine, mix evenly, and marinate for a while.

Cut the tofu into pieces and set aside.

Cook the peas and set aside.

Julienne the ginger and set aside.

The prepared starch slurry is set aside for later use.

Pour a little oil into the pan, stir-fry the marinated shrimp until golden, add the shredded ginger, then pour in the tofu and peas, stir-fry a few times, add a little salt, light soy sauce, white pepper, and a little water, bring to a boil, and then continue to pour in the prepared cornstarch slurry.

Slow cook for about three minutes, then increase to high heat to reduce the sauce and remove from the pan.
