
Stir-fried Beef Tendon with Green Beans
Braised beef tendon, meltingly soft yet springy, is stir-fried with crisp green beans and aromatics. The contrast of gelatinous richness and fresh, snappy vegetables makes an unusually satisfying dish with deep, savoury character.
Instructions

Snap off both ends of the green beans, break them into sections, and wash them thoroughly.

Add a pinch of salt to boiling water, blanch the green beans until 80% cooked, then remove and cool them.

Slice the cooked beef tendon, and chop the ginger, shallots, and dried chili peppers.

Heat the pan without oil, then add oil, and successively add scallions, ginger, chili, and beef tendon to stir-fry.

Add cooking wine and light soy sauce for coloring.

Add the green beans and stir-fry evenly, add a little water, cover and simmer for 2 minutes, then season with salt.
