Stir-fried Pork Tripe with Green Peppers

Sliced cooked pork stomach, tender and faintly chewy, is stir-fried with crisp green peppers, garlic and soy. Clean, savoury and aromatic, it is a classic home-style dish that showcases offal at its most approachable.
