
Braised Black Fish
Chunks of snakehead fish are seared, then braised with mushrooms in soy, sugar, vinegar and red chilli until the flesh turns silky and the sauce clings in a glossy sheen. The mild, firm fish soaks up every drop of the savoury glaze.
Instructions

Cut the black fish into pieces, blanch them, and remove the slime.

Blanch the mushrooms and set aside.

Prepare the seasonings.

Place the fish in the pan and fry it in oil until set.
- 5

Add the seasonings, then vinegar, light soy sauce, and warm water.
- 6

Bring to a boil over high heat, then reduce to low heat and cook for 10 minutes.

Add the mushrooms and cook for another 10 minutes, then remove the cooked yellow scallions and chili peppers.
- 8

Put back the prepared chopped green onions and chili, simmer on high heat until the sauce thickens, and it's ready.
