
Fried mint
Fresh mint leaves are dipped in a featherlight egg batter and fried until shatteringly crisp, then salted while hot. The herb's cool, bracing flavour survives the frying, making an unusual snack with a delicate, lacy crunch.

Soak fresh mint with salt for a while, then rinse it clean and drain the water for later use.

In a bowl, add flour, baking soda, and salt, and mix well. Add eggs and water and stir until combined, then let it sit for a while.

Pour oil into the pan and wait for the oil to heat up.

Put the mint leaves into the batter, letting the mint leaves be evenly coated with a thin layer of batter.

Place the mint coated with batter into the pan, remember to flip it halfway through, and take it out when both sides of the mint leaves turn golden brown.

Serve on a plate and it's ready to eat.
