
Homemade Braised Tofu
Thick blocks of tofu are fried until golden, then simmered in a fragrant sauce of soy, oyster sauce and rock sugar perfumed with star anise. Soft within and savoury-sweet outside, it is a comforting homemade classic built for rice.

Cut the tofu into equal-sized pieces and use kitchen paper to absorb the water (you can skip this, but it might cause splattering when frying).

Place the tofu along the edge of the pan to avoid burns, and flip it after about 2 minutes. When the tofu turns golden and floats, it indicates that it is fully fried. If you want it soft, take it out now; if you want it firm, fry it a bit longer.

Stir-fry scallions and ginger, stir-fry the seasonings until fragrant (put the seasonings in a bowl in advance, then add them to the pan together to stir-fry until fragrant), add hot water to cover the tofu, add chicken broth and rock sugar. (You can replace the hot water with chicken stock; I changed the sauce for the tofu to chicken broth on a whim, it's just as delicious), cook for 10 minutes and turn off the heat, soaking overnight makes it even more delicious 😋

- yellow rock sugar适量(不吃可不放)
