Stir-fried leeks with dried tofu

Seared pressed tofu and fragrant Chinese chives are tossed over fierce heat in a fast, punchy stir-fry, delivering garlicky allium sweetness against a chewy, golden-brown bite of bean curd that comes together in minutes.

    Cut the chives. Cut the dried tofu into evenly sized strips, slice the meat into strips, and cut the red pepper into strips.

    Bring the water in the pot to a boil and add the dried tofu to blanch. Add some salt. When the water boils again, cook for about 10 more seconds and then take it out.

    Heat oil in a pan and add some lard. Put in the shredded meat and stir-fry until cooked. Add chopped garlic, dried tofu, and red pepper strips. Add cooking wine, half a spoon of light soy sauce, and oyster sauce. Add chicken bouillon, sugar, and salt! Stir-fry evenly over high heat. Add the chives and stir-fry them until tender, then remove from the pan.
