Hot and sour shredded potatoes

Matchstick potatoes hit screaming-hot oil with dried chilies, finished with a double hit of vinegar for that signature crisp, tangy, fiery crunch, the most iconic quick stir-fry in Chinese home cooking.

    Cut the potatoes into evenly sized thin strips, wash them several times in water until the water is clear, then soak them in clean water for 10-20 minutes.

    When the water boils, put the shredded potatoes in to blanch, and add a bit of white vinegar. Once it boils again, immediately take them out. Drain the water completely.

    Heat oil in a pan, add dried chili peppers and garlic, and stir-fry until fragrant. Add shredded potatoes and pour in the first round of vinegar. Stir-fry over high heat until evenly mixed, then add chicken essence, sugar, and salt, and stir-fry, then add the second round of vinegar. Stir-fry evenly. Add chili oil and remove from the pan.
