
Beef Stir-Fried with Green Peppers
Rapid-seared beef and shards of green pepper keep their bite and color in this wok classic, the meat velveted for tenderness while the peppers add grassy snap and gentle heat over rice.

Slice fresh beef thinly, marinate with a little light soy sauce, cornstarch, and pepper (if too dry, you can add a tiny bit of water), and mix well. Let it marinate for 20 minutes.
