Braised Eggplant
Eggplant turns meltingly soft and greedy for sauce, braised in a sweet-savory glaze of soy, garlic, and sugar until glossy and spoon-tender, a classic dish that vanishes fastest at the dinner table.
Instructions
- 1

Clean the eggplant and cut it into strips, then soak it in salt water for 5 minutes.
- 2

Drain the water and steam in a steamer for 8 minutes.
- 3

Put the slices of meat into a small amount of oil, dark soy sauce, oyster sauce, and starch, and mix well.
- 4

Prepare the ingredients. Mince the garlic, cut the small red chili peppers into pieces, cut the green onions into sections, and slice the green peppers.
- 5

Put oil in the pan, first add the small red chili peppers and minced garlic to stir-fry.
- 6

Add the slices of meat and stir-fry until they change color.
- 7

Pour in the steamed eggplant.
- 8

Add an appropriate amount of dark soy sauce, oyster sauce, a little black pepper, and white sugar for seasoning.
- 9

Add the shredded green peppers and stir-fry, pour in the thickening water, stir together, and then add the shredded green onions.
- 10

Plate the dish.
