Braised Eggplant

Eggplant turns meltingly soft and greedy for sauce, braised in a sweet-savory glaze of soy, garlic, and sugar until glossy and spoon-tender, a classic dish that vanishes fastest at the dinner table.

    Clean the eggplant and cut it into strips, then soak it in salt water for 5 minutes.

    Drain the water and steam in a steamer for 8 minutes.

    Put the slices of meat into a small amount of oil, dark soy sauce, oyster sauce, and starch, and mix well.
