Beef Stir-Fried with Onions
Beef slices, velveted for tenderness, sear hard and fast with sweet onion petals, the released juices forming a glossy savory coat, a weeknight classic balancing char, sweetness, and tender meat.

Do not wash the beef. Cut it into chunks along the grain, then cut it across the grain into evenly sized thin slices.

Put the sliced beef into a large bowl. Add some baking soda and mix it well. Mix it a bit more, then add some water. Wash it clean and squeeze out the water.

Squeeze the beef dry to remove the moisture, add a spoon of light soy sauce, a spoon of dark soy sauce, salt, pepper, and a little cooking wine, and mix it evenly and thoroughly. Add egg white and mix again, then add dry starch. Mix well, then add a little oil. Set it aside to marinate for 8-10 minutes.

Cilantro cut into sections. Cut the bird's eye chili into pieces. Garlic and onion cut into chunks and then pulled apart.

Heat oil in a pan, and when the oil reaches about 40-50% heat, add the beef without stirring. Once it sets, stir it to break it up. Do not cook for a long time; once the color changes, remove it immediately.

Heat oil in a pan, add small chili peppers and garlic, and stir-fry until fragrant. Add onions and beef, then add half a spoon of light soy sauce, dark soy sauce, salt, chicken essence, and pepper powder, and stir-fry briefly before adding oyster sauce. Do not stir-fry for too long; add it after the beef changes color. Add cilantro, and just before taking it out of the pan, drizzle a little sesame oil.
