Braised Pork Belly in Soy Sauce

Pork belly braises under pressure with soy, sugar, and a whisper of red yeast powder, arriving lacquered in a ruby-brown glaze, wobbling and tender, with fat that dissolves on the tongue.

    Wash the pork belly, soak it to remove the blood, and wash it thoroughly several times.

    Add the old broth, pork belly powder, light soy sauce, braised soy sauce, red yeast rice powder, and salt, and pressure cook in a pressure cooker for 15 minutes (the time may vary depending on each pressure cooker, adjust accordingly).
