Braised Pork Belly in Soy Sauce
Pork belly braises under pressure with soy, sugar, and a whisper of red yeast powder, arriving lacquered in a ruby-brown glaze, wobbling and tender, with fat that dissolves on the tongue.
Instructions
- 1

Wash the pork belly, soak it to remove the blood, and wash it thoroughly several times.
- 2

Place water and pork belly in a pot, add cooking wine, ginger slices, and a tied green onion, and cook until no blood remains.
- 3

Add the old broth, pork belly powder, light soy sauce, braised soy sauce, red yeast rice powder, and salt, and pressure cook in a pressure cooker for 15 minutes (the time may vary depending on each pressure cooker, adjust accordingly).
- 4

Take out the braised pork once it has cooled, cut it into slices and arrange on a plate; it has a bright red color and a rich aroma.
