Stewed Eggs with Tomatoes

Tender eggs simmer low in a jammy tomato sauce, absorbing its sweet-tangy juices instead of just sitting on top, a humble homestyle braise that pools beautifully over a bowl of rice.

    Make a cross cut on the tomato, scald it with boiling water to remove the skin. Cut it into small cubes.

    Crack 5 eggs into a bowl. Heat oil in a pan, pour in the eggs, fry until both sides are slightly yellow, then take them out and cut into small pieces.

    Leave some oil in the pot, add the green onions and garlic. Pour in the tomatoes. Stir-fry them, stir-fry a bit longer until a sauce forms. Add light soy sauce and a little water. Put the eggs in and cover the pot. Once opened, add salt, sugar, and pepper, cover the pot and cook for 3 minutes. When thickened, sprinkle with chopped green onions.
