Charcoal-blistered peppers are skinned, chopped, and dressed with hot oil and garlic, then spooned over chilled century eggs, smoky, garlicky heat against cool, jelly-like richness, a beloved spicy appetizer.

Dry pot chili stir-fry.

Fry until it has a tiger skin pattern.
